Zucchini Cashew Soup

One of my favorite recipes from Beachbody’s Ultimate Reset is the Zucchini Cashew Soup.  It only has 3 ingredients and is very easy to make!

Ingredients:

  • 1 large or 2 small zucchinis
  • 1/4 cup cashews
  • liquid aminos

Soak the cashews in water for 30 minutes.  Cut zucchini into large chunks and steam.  Put the cashews and zucchini in a blender.  Blend!  Add liquid aminos for taste and water until desired consistency.  Enjoy!

Makes 1 1/2 cups for 250 calories.

New Years Resolutions
